George was born on November 18th, 1920 in Viniani, Evrytania to Christos and Eleni Kolokithas. He had one brother (Nikos) who was married to Maria, and who later had one daughter (Eleni). George's grandfather Nikolas (1861-1905) had immigrated to America in the early 1900's and died in Knoxville, Tennessee. When George first arrived in America in 1949-1950, he came to Richmond, Virginia where his father and brother resided. Soon after making the move to Fort Worth, Texas─where his uncle Angelos Kolokithas lived─he began to work in the restaurant business. By the early 1960's, he had moved to Charlotte, North Carolina, where he worked at several restaurants over the years. Some of the establishments he worked at included Presto Grill, Stassinos', the Athens Restaurant, and Santinos'. He enjoyed spending time with fellow Vinianites, and the kinship he shared with them was tempered from the unimaginable wartime hardships he endured─which never hardened his kind heart.
